| Danish Split Pea Soup |
| Ingredients |
- 1 lb Split peas - rinsed and soaked overnight
- 2 qt Water
- 1 Meaty ham bone
- 2 cups Chopped celery and tops
- 2 cups Chopped onion
- 2 cups Finely chopped carrots
- 1 clove Garlic, minced
- 1/4 cups Chopped Parsley
- 2 t. Oregano
- 1 Bay leaf
- 1 t. Sugar
- 1 T. salt
- 1/2 t. Black Pepper

| Procedure |
Pour off water that peas were soaked in. Combine all ingredients in large pot. Heat to boiling, stirring frequently. Reduce heat and simmer, covered, one and a half hours. Stir occasionally. Cut meat from ham bone and add to soup. Enjoy!
