Denmark Meat Dish
Danish Split Pea Soup
Ingredients

  • 1 lb Split peas - rinsed and soaked overnight
  • 2 qt Water
  • 1 Meaty ham bone
  • 2 cups Chopped celery and tops
  • 2 cups Chopped onion
  • 2 cups Finely chopped carrots
  • 1 clove Garlic, minced
  • 1/4 cups Chopped Parsley
  • 2 t. Oregano
  • 1 Bay leaf
  • 1 t. Sugar
  • 1 T. salt
  • 1/2 t. Black Pepper
Procedure
Pour off water that peas were soaked in. Combine all ingredients in large pot. Heat to boiling, stirring frequently. Reduce heat and simmer, covered, one and a half hours. Stir occasionally.  Cut meat from ham bone and add to soup. Enjoy!
